Flourless Chocolate Cake

Ingredients:
- 1 cup (225g) semi-sweet or bittersweet chocolate, chopped
- 1/2 cup (115g) unsalted butter
- 3/4 cup (150g) granulated sugar
- 1/4 teaspoon salt
- 4 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 cup (50g) unsweetened cocoa powder (sifted)
- Powdered sugar, for dusting (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.
- Melt Chocolate and Butter: In a heatproof bowl, combine the chopped chocolate and butter. Set the bowl over a pot of simmering water (double boiler method) and stir until smooth and melted. Remove from heat and let it cool slightly.
- Mix Sugar and Eggs: Whisk the granulated sugar and salt into the melted chocolate-butter mixture. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- Add Cocoa Powder: Sift the cocoa powder into the chocolate mixture and gently fold it in until well combined.
- Bake: Pour the batter into the prepared cake pan. Bake for 20-25 minutes, or until the edges are set and the center is slightly soft (a toothpick inserted should come out with a few moist crumbs).
