Vegan White Bean and Kale Soup

  • Onion – 1, diced
  • Carrots – 2, diced
  • Celery – 2 stalks, diced
  • Garlic – 3 cloves, minced

  • White beans (canned or cooked) – 2 cups
  • Kale – 4 cups, chopped
  • Bay leaves – 2
  • Thyme – 1 tsp
  • Salt and pepper – to taste
  • Lemon juice – 1 tbsp (optional)

Instructions:

  1. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and sauté for 5-7 minutes until softened.
  2. Add Garlic: Stir in minced garlic and cook for another 1 minute.
